Ingredients

  • 3 envelopes of unflavored gelatin
  • 1 cup of cold water
  • 2 cups of granulated sugar
  • 1/2 cup of corn syrup
  • 1/4 teaspoon of salt
  • 1 teaspoon of vanilla extract
  • 1/2 cup of powdered sugar
  • 1/2 cup of cornstarch

Instructions

  1. In a mixing bowl, combine 1/2 cup of cold water and gelatin. Let it sit for 10 minutes to soften.

  2. In a saucepan, combine the remaining 1/2 cup of water, granulated sugar, corn syrup, and salt. Cook over medium heat until the mixture reaches 240°F (115°C) on a candy thermometer.

  3. Slowly pour the hot sugar mixture into the gelatin mixture, while beating on low speed. Gradually increase the speed to high and beat for 10-12 minutes until the mixture becomes thick and fluffy.

  4. Add the vanilla extract and beat for an additional minute.

  5. In a separate bowl, mix together the powdered sugar and cornstarch. Line a baking pan with parchment paper and generously dust it with the powdered sugar mixture.

  6. Pour the marshmallow mixture into the prepared pan, spreading it out with a spatula. Dust the top with more of the powdered sugar mixture.

  7. Allow the marshmallows to set at room temperature for at least 4 hours or overnight.

  8. Once set, cut the marshmallows into squares or use cookie cutters to create fun shapes.

  9. Toss the marshmallows in the remaining powdered sugar mixture to coat and shake off any excess.

  10. Enjoy as a snack or add to hot chocolate for a delicious treat!
