Ingredients

  • 12 small baby potatoes
  • 12 cocktail sausages
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • 1 tablespoon chopped fresh parsley (for garnish)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Scrub the baby potatoes and pierce each one with a fork a few times.

  3. Place the potatoes on a baking tray and drizzle with olive oil. Season with salt and pepper.

  4. Bake the potatoes for 30-35 minutes, or until tender.

  5. In a small bowl, whisk together the maple syrup, soy sauce, and Dijon mustard.

  6. Heat a non-stick skillet over medium heat and add the cocktail sausages. Cook for 5 minutes, or until lightly browned.

  7. Pour the maple syrup mixture over the sausages and cook for another 2 minutes, until the sausages are coated and sticky.

  8. Remove the baked potatoes from the oven and let them cool slightly.

  9. Cut a small slit on the top of each potato and stuff with a sticky sausage.

  10. Sprinkle chopped fresh parsley over the potatoes for garnish.

  11. Serve immediately and enjoy!
