Ingredients

  • 16 large mushrooms
  • 1 cup crumbled feta cheese
  • 1/4 cup bread crumbs
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 cups shredded cabbage
  • 1 carrot, grated
  • 2 green onions, sliced

Instructions

  1. Preheat the oven to 375°F (190°C). Remove the stems from the mushrooms and set aside.

  2. In a bowl, combine the feta cheese, bread crumbs, olive oil, salt, and pepper. Stuff the mushroom caps with the mixture and place them on a baking sheet.

  3. Bake for 15-20 minutes or until the mushrooms are tender and the cheese is melted and golden.

  4. In a separate bowl, mix together the mayonnaise, Dijon mustard, cabbage, carrot, and green onions to make the mustard slaw.

  5. Serve the feta-stuffed mushrooms with a side of the mustard slaw.
