Ingredients
- 2 eggplants
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 2 eggs, beaten
- Vegetable oil, for frying
Instructions

Rinse the eggplants and cut them into thin slices.

In a bowl, combine the flour, baking powder, salt, black pepper, and paprika.

In another bowl, mix together the Parmesan cheese and parsley.

Dip each eggplant slice into the beaten eggs, then coat it in the flour mixture.

Heat vegetable oil in a frying pan over medium heat.
