Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 1 large beet, cooked and diced
  • 2 garlic cloves, minced
  • 3 tbsp tahini
  • 3 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Water to adjust consistency

Instructions

  1. In a food processor, blend together chickpeas, beet, garlic, tahini, lemon juice and olive oil until smooth.

  2. Add salt and pepper to taste.

  3. Add water to adjust consistency, if needed.

  4. Serve with pita bread, vegetable sticks or use as a spread on sandwiches.
