How To Make Beet and Chocolate Brownies
Rich and fudgy brownies made with earthy beets and dark chocolate.

Ingredients
- 1 medium-sized beet, cooked and pureed
- 1/2 cup dark chocolate chips
- 1/2 cup flour
- 1/3 cup sugar
- 1/4 cup unsweetened cocoa powder
- 1/4 cup vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 1/4 tsp salt
- powdered sugar for dusting (optional)
Instructions

Preheat oven to 350°F. Grease an 8×8 inch baking dish.

In a medium bowl, whisk together flour, sugar, cocoa powder, and salt.

In a separate bowl, whisk together beet puree, oil, and vanilla extract. Add the eggs and beat well.

Melt the chocolate chips in the microwave or on a double boiler.

Add the melted chocolate chips to the beet mixture and stir until smooth.

Add the dry ingredients to the wet mixture and stir until well combined.

Pour batter into the prepared baking dish and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Let cool, dust with powdered sugar (if using), cut into squares, and serve.
