How To Make Roasted Beet Salad
A colorful and flavorful salad made of roasted beets, fresh greens, and tangy dressing.
Serves:
Ingredients
- 4 medium-sized beets
- 4 cups mixed greens
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped walnuts
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tbsp honey
- Salt and pepper to taste
Instructions

Preheat oven to 400°F.

Wash and peel beets, then cut into small chunks.

Place the beets in a roasting pan, drizzle with olive oil, and season with salt and pepper.

Roast the beets in the preheated oven for 45 minutes or until tender.

In a small bowl, whisk together balsamic vinegar, honey, and 1 tbsp of olive oil.

In a large bowl, toss the mixed greens with the dressing.

Add roasted beets, crumbled feta cheese, and chopped walnuts.
