Ingredients

  • 4 medium-sized beets
  • 4 cups mixed greens
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped walnuts
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F.

  2. Wash and peel beets, then cut into small chunks.

  3. Place the beets in a roasting pan, drizzle with olive oil, and season with salt and pepper.

  4. Roast the beets in the preheated oven for 45 minutes or until tender.

  5. In a small bowl, whisk together balsamic vinegar, honey, and 1 tbsp of olive oil.

  6. In a large bowl, toss the mixed greens with the dressing.

  7. Add roasted beets, crumbled feta cheese, and chopped walnuts.

  8. Serve and enjoy!
