How To Make Delicata Squash Soup
A creamy and comforting soup made with delicata squash.
Serves:
Ingredients
- 2 delicata squash, halved and seeded
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1/2 cup heavy cream (optional)
Instructions

Preheat oven to 400°F and place squash halves on a baking sheet, cut side down. Roast for 30 minutes or until tender.

In a large pot, heat oil over medium heat and sauté onions and garlic until translucent.

Add vegetable broth, scooped out squash flesh, and spices. Simmer for 15 minutes.

Use an immersion blender or transfer to a blender and puree until smooth. Add cream (if using) and blend again until combined.

Season with salt and pepper to taste. Serve hot.
