How To Make Aubergine Salad

Ingredients
- 2 aubergines
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions

Preheat grill to medium heat.

Slice the aubergines into 1/2-inch thick rounds.

Brush the aubergine slices with olive oil and sprinkle with salt and pepper.

Grill the aubergine slices for about 4-5 minutes per side, until they are tender and have grill marks.

Remove the grilled aubergine from the grill and let them cool slightly.

Cut the aubergine slices into bite-sized pieces and transfer to a large salad bowl.

Add the sliced bell peppers, red onion, cherry tomatoes, parsley, and mint to the bowl with the aubergine.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the vinaigrette.

Pour the vinaigrette over the salad and toss gently to combine.

Serve the aubergine salad chilled or at room temperature.
