  • 1 lb baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tbsp mustard seeds
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, toss the baby potatoes with olive oil, mustard seeds, salt, black pepper, red pepper flakes, and minced garlic.

  3. Spread the seasoned potatoes onto a baking sheet in an even layer.

  4. Roast in the preheated oven for 25 minutes, or until the potatoes are golden brown and crispy.

  5. Remove from the oven and sprinkle with fresh parsley before serving.
