Ingredients

  • 4 large red bell peppers, diced
  • 1 large red onion, diced
  • 2 cloves of garlic, minced
  • 1 cup of white vinegar
  • 1 cup of granulated sugar
  • 1 tsp of mustard seeds
  • 1 tsp of celery seeds
  • 1/2 tsp of red pepper flakes
  • Salt, to taste

Instructions

  1. In a large pot, combine the diced bell peppers, onion, garlic, vinegar, sugar, mustard seeds, celery seeds, and red pepper flakes.

  2. Bring the mixture to a boil over medium heat, then reduce the heat and simmer for 30 minutes, stirring occasionally.

  3. Season with salt to taste.

  4. Remove from heat and allow the relish to cool before transferring to a sterilized jar.

  5. Refrigerate for at least 24 hours before serving to allow the flavors to meld together.
