Ingredients

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons sweet pickle relish
  • 1/4 cup chopped celery
  • 1/4 cup chopped red onion
  • Salt and pepper to taste

Instructions

  1. Place the eggs in a saucepan and cover with cold water. Bring to a boil over high heat.

  2. Once boiling, reduce the heat to low and simmer for 12 minutes.

  3. Remove the eggs from the saucepan and place them in a bowl of ice water to cool.

  4. Once cooled, peel the eggs and chop them into small pieces.

  5. In a separate bowl, combine the mayonnaise, Dijon mustard, sweet pickle relish, celery, red onion, salt, and pepper.

  6. Add the chopped eggs to the mayonnaise mixture and stir until well combined.

  7. Taste and adjust seasonings as needed.

  8. Serve the egg salad on bread as a sandwich or as a side dish.
