  • 4 medium-sized potatoes
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, chopped chives

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Wash and peel the potatoes, then slice them into 1/4 inch thick rounds.

  3. In a large bowl, toss the potato slices with olive oil, garlic powder, onion powder, dried thyme, salt, and pepper until well coated.

  4. Take a large piece of aluminum foil and place the seasoned potato slices on it, arranging them in a single layer.

  5. Fold the edges of the foil to create a packet, ensuring the potatoes are well sealed inside.

  6. Place the foil packet on a baking sheet and bake in the preheated oven for 45-50 minutes, or until the potatoes are tender.

  7. Carefully open the foil packet, sprinkle with optional toppings if desired, and bake for an additional 5 minutes to melt the cheese.

  8. Serve the foil potatoes hot as a delicious side dish.
