- 2 ripe pears, peeled, cored, and diced
- 1 cup dried apricots, chopped
- 1 onion, chopped
- 1/2 cup apple cider vinegar
- 1/4 cup brown sugar
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/8 teaspoon cayenne pepper

In a large saucepan, combine the pears, dried apricots, onion, apple cider vinegar, brown sugar, ground ginger, ground cinnamon, salt, and cayenne pepper.

Bring the mixture to a boil over medium heat, then reduce the heat and simmer for about 30 minutes until the pears and apricots are tender and the chutney has thickened.
