Ingredients

  • 2 ripe pears, peeled, cored, and diced
  • 1 cup dried apricots, chopped
  • 1 onion, chopped
  • 1/2 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper

Instructions

  1. In a large saucepan, combine the pears, dried apricots, onion, apple cider vinegar, brown sugar, ground ginger, ground cinnamon, salt, and cayenne pepper.

  2. Bring the mixture to a boil over medium heat, then reduce the heat and simmer for about 30 minutes until the pears and apricots are tender and the chutney has thickened.

  3. Remove from heat and let the chutney cool completely.

  4. Transfer the chutney to a jar or airtight container and refrigerate for at least 2 hours before serving.
