How To Make Piccalilli Potato Salad

Ingredients
- 4 large potatoes, peeled and cubed
- 1 cup piccalilli sauce
- 1/4 cup mayonnaise
- 1/4 cup diced red onion
- 1/4 cup diced celery
- 1/4 cup chopped dill pickles
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
Instructions

Place the potatoes in a large pot and cover with water. Bring to a boil and cook until fork-tender, about 15 minutes. Drain and let cool.

In a large bowl, mix together piccalilli sauce, mayonnaise, red onion, celery, pickles, and parsley.

Add the cooled potatoes to the bowl and gently toss to coat them in the dressing. Season with salt and pepper to taste.

Refrigerate the salad for at least 1 hour before serving to allow the flavors to meld together.

Serve chilled and garnish with additional parsley, if desired.
