  • 6 pears, ripe, firm, peeled and coarsely chopped
  • 5 oz. apricots, dried
  • 1/4 cup fresh ginger, peeled and grated
  • 1/2 cup water
  • 1/4 cup sugar
  • 1 tsp. lemon zest
  • 1 lemon, juiced
  • 1 cinnamon stick
  • 1 tbsp. lemon juice
  • 8 oz. nonfat vanilla yogurt


  1. Place 4 of the pears with the remaining ingredients (except the lemon juice and yogurt) in a saucepan.

  2. Simmer for about 20 minutes until pears are tender.

  3. Toss remaining 2 pears in lemon juice and reserve.

  4. Remove cinnamon stick from pear-apricot mixture and process in a food processor briefly. Let cool.

  5. Place 1/4 cup into the fruit mixture into parfait glasses, followed by 1/4 cup yogurt and another 1/4 cup fruit mixture.

  6. Top with reserved pears and serve.
