  • 2 tablespoons mustard seeds
  • 2 tablespoons whole coriander seeds
  • 2 tablespoons whole black peppercorns
  • 2 tablespoons whole allspice berries
  • 1 tablespoon whole cloves
  • 1 tablespoon crushed red pepper flakes
  • 2 tablespoons dried dill weed
  • 2 tablespoons dried bay leaves
  • 2 tablespoons dried ginger

Instructions

  1. In a dry skillet, toast the mustard seeds, coriander seeds, and black peppercorns over medium heat until fragrant, about 2 minutes.

  2. Remove from heat and let cool.

  3. In a spice grinder or food processor, grind the toasted spices along with the allspice berries, cloves, and red pepper flakes until finely ground.

  4. Transfer the ground spice mixture to a bowl and stir in the dried dill weed, bay leaves, and dried ginger.

  5. Store the pickling spice in an airtight container in a cool, dark place for up to 6 months.
