  • 2 cups dried pinto beans, soaked overnight

  • 1 jalapeno, seeded and diced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp chili powder
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. Rinse the soaked pinto beans and place them in a slow cooker.

  2. Add diced onions, minced garlic, jalapeno, cumin, paprika, and chili powder.

  3. Pour in vegetable broth and season with salt and pepper.

  4. Stir everything together.

  5. Cook on low heat for 6-8 hours or on high heat for 4-5 hours, until the beans are tender.
