Serves:
Ingredients
- 4 leeks, trimmed and halved lengthwise
- 2 tablespoons of butter
- 1 garlic clove, minced
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/2 cup of vegetable broth
- 1 tablespoon of lemon juice
- 1 tablespoon of fresh parsley, chopped
Instructions
-
In a large skillet, melt the butter over medium heat. Add the garlic and sauté for 1 minute until fragrant.
-
Add the leeks to the skillet, cut side down, and cook for 5 minutes until they start to brown.
-
Flip the leeks over and season with salt and pepper. Pour in the vegetable broth and lemon juice, then cover the skillet with a lid and reduce the heat to low. Let the leeks simmer for 30 minutes until they are tender.
-
Remove the lid and increase the heat to medium-high. Cook for an additional 5 minutes to reduce the liquid and slightly caramelize the leeks.
-
Transfer the braised leeks to a serving dish and garnish with fresh parsley.
-
Serve hot and enjoy!
