  • 1 lb large shrimp, peeled and deveined
  • Salt and pepper, to taste
  • 6 cups fresh baby spinach leaves
  • 1/4 cup thinly sliced red onion
  • 1/4 cup crumbled feta cheese
  • 1/4 cup sliced almonds
  • 2 tbsp chopped fresh parsley
  • For the dressing:
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Heat a large skillet over medium-high heat. Season shrimp with salt and pepper, then add to skillet. Cook for 2-3 minutes per side or until pink and opaque.

  2. In a large salad bowl, combine spinach, red onion, feta cheese, sliced almonds, and chopped parsley.
