A flavorful twist on a classic quesadilla, stuffed with juicy turkey, tart cranberries, and melted cheese.

Ingredients

  • 4 large flour tortillas
  • 2 cups of cooked turkey, shredded
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of dried cranberries
  • 2 tbsp of butter
  • Salt and pepper to taste

Instructions

  1. Preheat a large skillet over medium-high heat.

  2. Lay one tortilla in the skillet, then sprinkle with cheese, turkey, and cranberries. Season with salt and pepper.

  3. Place a second tortilla on top, then spread butter on the top tortilla.

  4. Cook for 2-3 minutes per side, until cheese is melted and tortillas are lightly golden. Repeat with remaining tortillas and filling.

  5. Cut into quarters and serve hot.
