Ingredients

  • 2 cups of fresh corn kernels
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1 jalapeño pepper, seeded and diced
  • 1/4 cup of chopped cilantro
  • 2 tbsp of lime juice
  • 1 tbsp of olive oil
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium-high heat and add the corn kernels. Cook for 5-7 minutes until they start to brown.

  2. In a large bowl, combine the cooked corn kernels, red bell pepper, red onion, jalapeño pepper, and cilantro.

  3. In a separate bowl, whisk together the lime juice, olive oil, salt, and pepper.

  4. Pour the dressing over the salad and toss everything together.

  5. Serve and enjoy!
