Ingredients

  • 2 cups of cooked corn kernels
  • 1 can of black beans, rinsed and drained
  • 1/2 red onion, finely chopped
  • 1 red bell pepper, diced
  • 1 jalapeño pepper, seeded and finely chopped
  • 1/4 cup of chopped fresh cilantro
  • Juice of 1 lime
  • 1/4 cup of olive oil
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine corn, black beans, red onion, red bell pepper, jalapeño pepper, and cilantro.

  2. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.

  3. Pour dressing over the corn and bean mixture and toss to coat.

  4. Serve immediately or chill in the refrigerator until ready to serve.
