Ingredients

  • 1/2 cup of cornmeal
  • 1/2 cup of flour
  • 1/4 cup of sugar
  • 1 tsp. of baking powder
  • 1/2 tsp. of salt
  • 1/4 cup of melted butter
  • 1 can of cream-style corn
  • 1 can of whole-kernel corn
  • 2 eggs, beaten
  • 1 cup of milk

Instructions

  1. Preheat oven to 375°F.

  2. In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.

  3. Stir in the melted butter, cream-style corn, whole-kernel corn, beaten eggs, and milk.

  4. Pour the mixture into a greased 9-inch baking dish.

  5. Bake for 1 hour or until the pudding is golden brown on top and set in the center.

  6. Let cool for a few minutes before serving.
