Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • 2 eggs
  • 4 tbsp unsalted butter, melted
  • 1 cup corn kernels (fresh or canned)

Instructions

  1. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.

  2. In a separate bowl, beat the eggs and then whisk in the milk and melted butter.

  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the corn kernels.

  4. Heat a nonstick griddle or skillet over medium heat. Use a 1/4 cup measure to ladle the batter onto the griddle, spreading it out slightly with a spatula. Cook for about 2-3 minutes on each side, or until golden brown and cooked through.

  5. Serve hot with butter and syrup.
