How To Make Fried Green Tomatoes with Ripe Tomato Salsa

Ingredients
- 4 green tomatoes, sliced
- 1 cup of cornmeal
- 1/2 cup of all-purpose flour
- 1 tsp of salt
- 1 tsp of paprika
- 1/2 tsp of black pepper
- Vegetable oil, for frying
- 2 ripe tomatoes, diced
- 1/2 red onion, minced
- 1 jalapeño, seeded and minced
- 1/4 cup of chopped cilantro
- Juice of 1 lime
- Salt and pepper to taste
Instructions

In a shallow dish, mix cornmeal, flour, salt, paprika, and black pepper.

Dip green tomato slices in the cornmeal mixture, coating both sides.

Heat vegetable oil in a large skillet over medium-high heat.

Fry the coated tomato slices until golden brown on both sides, about 3 minutes per side. Drain on paper towels.

In a separate bowl, combine diced ripe tomatoes, minced red onion, minced jalapeño, chopped cilantro, lime juice, salt, and pepper. Mix well to create the salsa.

Serve the fried green tomatoes with the ripe tomato salsa on the side.
