How To Make Zucchini and Corn Quesadillas
Delicious and easy-to-make vegetarian dish perfect for a quick lunch or dinner.
Serves:
Ingredients
- 2 zucchinis, sliced
- 1 cup of frozen corn
- 1 red bell pepper, sliced
- 2 garlic cloves, minced
- 1 tsp of chili powder
- Salt and pepper, to taste
- 4 flour tortillas
- 2 cups of shredded cheddar cheese
- 2 tbsp of vegetable oil
Instructions

In a large skillet over medium heat, add oil and zucchini. Cook until slightly browned, about 3-5 minutes.

Add corn, red bell pepper, garlic, chili powder, salt, and pepper. Cook until vegetables are tender, about 5 minutes.

Heat a separate skillet over medium heat and place a tortilla in the skillet. Sprinkle 1/2 cup of cheese on top of tortilla. Add 1/4 of the vegetable mixture on top of the cheese.

Fold the tortilla in half and cook until cheese is melted and tortilla is browned, about 2-3 minutes on each side.

Repeat steps 3 and 4 with the remaining tortillas and ingredients.
