How To Make Corn Truffle (Huitlacoche) Quesadillas

Ingredients
- 8 medium-sized tortillas
- 1 cup of corn truffle (huitlacoche)
- 2 cups of shredded cheese (preferably Oaxaca or Monterey Jack)
- 1/4 cup of chopped onion
- 1/4 cup of chopped cilantro
- Salt and pepper to taste
Instructions

In a large skillet, sauté the chopped onion until translucent.

Add the corn truffle and cook for about 5 minutes, until tender.

Season with salt and pepper to taste.

In a separate skillet, heat a tortilla over medium heat.

Sprinkle a handful of shredded cheese on top of the tortilla.

Spoon some of the corn truffle mixture onto the cheese.

Sprinkle some chopped cilantro on top.

Place another tortilla on top and press down gently.

Cook the quesadilla for about 2-3 minutes on each side, until the cheese has melted and the tortillas are crispy.

Repeat with the remaining tortillas and filling.

Cut the quesadillas into quarters and serve hot.
