How To Make Oregano and Quinoa Stuffed Bell Peppers Recipe
A flavorful and healthy dish where bell peppers are stuffed with oregano-seasoned quinoa mixture.

Ingredients
- 4 bell peppers, tops removed and seeds removed
- 1 cup quinoa, cooked
- 1 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tbsp dried oregano
- 1 tsp cumin
- 1 can black beans, rinsed and drained
- 1 can diced tomatoes, drained
- 1/4 cup chopped fresh parsley
- Salt and pepper, to taste
- 1/2 cup shredded cheese
Instructions

Preheat oven to 375°F.

In a large pan, heat olive oil and sauté onions until soft. Add garlic and cook until fragrant.

Stir in cooked quinoa, oregano, cumin, black beans, diced tomatoes, and parsley. Season with salt and pepper.

Stuff bell peppers with quinoa mixture and place them in a baking dish.

Cover with foil and bake for 30 minutes.

Remove foil and sprinkle shredded cheese over the top of each pepper.

Bake for another 10-15 minutes until cheese is melted and peppers are tender.
