Ingredients

  • 1 cup lentils
  • 2 cups chicken or vegetable broth
  • 1 lb haddock fillets, cut into chunks
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/2 tsp chili flakes (optional)
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Fresh parsley, for garnish
  • Lemon wedges, for serving

Instructions

  1. In a large pot, bring the lentils and broth to a boil. Reduce heat to low, cover, and simmer for 20 minutes or until lentils are tender.

  2. In a separate pan, heat the olive oil over medium heat. Add the onion and garlic, and sauté until translucent.

  3. Add the haddock chunks to the pan, along with the cumin, paprika, turmeric, chili flakes (if using), salt, and pepper. Cook for about 5 minutes or until the fish is cooked through.

  4. Add the cooked lentils to the pan with the haddock mixture. Stir well to combine and cook for an additional 5 minutes to allow the flavors to blend.

  5. Serve the zesty lentil and haddock pilaf hot, garnished with fresh parsley and lemon wedges on the side.
