Ingredients

  • 1 ¼ cups all-purpose flour
  • ¼ cup cocoa powder
  • 1 ¼ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup milk
  • ¼ cup sour cream
  • Purple and green food coloring
  • 24 candy eyeballs
  • For the frosting:
  • ½ cup unsalted butter, softened
  • 2 ½ cups powdered sugar
  • 2-3 tbsp milk
  • ½ tsp vanilla extract
  • Purple food coloring

Instructions

  1. Preheat the oven to 350°F (180°C) and line a muffin tin with cupcake liners.

  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  4. Gradually add the dry ingredients to the butter mixture, alternating with the milk and sour cream. Mix until just combined.

  5. Divide the batter evenly into two bowls. Add purple food coloring to one bowl and green food coloring to the other bowl. Stir each bowl until the color is evenly distributed.

  6. Scoop a spoonful of purple batter and a spoonful of green batter into each cupcake liner, alternating colors. Use a toothpick to gently swirl the colors together.

  7. Bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool completely before frosting.

  8. In a large mixing bowl, beat the butter until creamy. Gradually add the powdered sugar, milk, vanilla extract, and purple food coloring. Beat until smooth and fluffy.

  9. Frost the cooled cupcakes with the purple frosting and decorate each cupcake with two candy eyeballs.
