How To Make Carrot Cake Cookies
Soft and chewy cookies with all the flavors of a classic carrot cake.

Ingredients
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1 1/2 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1 1/2 cups grated carrots
- 1/2 cup raisins
- 1/2 cup chopped walnuts
Instructions

Preheat oven to 350°F (180°C) and line baking sheets with parchment paper.

In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy.

Beat in egg and vanilla extract until well combined.

In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.

Gradually mix dry ingredients into wet mixture until just combined.

Fold in grated carrots, raisins, and chopped walnuts.

Using a cookie dough scooper, drop balls of dough onto prepared baking sheets.

Bake for 12-14 minutes, until cookies are golden and set.

Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
