Ingredients

  • 1 cup shredded carrots
  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1/4 cup unsweetened applesauce
  • 1/4 cup plain Greek yogurt
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 8-inch round cake pan.

  2. In a large bowl, whisk together the eggs, sugar, oil, applesauce, and yogurt until well combined.

  3. In a separate bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  5. Fold in the shredded carrots and chopped walnuts, if using.

  6. Pour the batter into the prepared cake pan and smooth the top.

  7. Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.

  8. Remove from the oven and let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  9. Serve the carrot cake as is or frost with your favorite cream cheese frosting.
