How To Make Carrot Cake Pops

Ingredients
- 1 1/4 cups grated carrots
- 1/2 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup vegetable oil
- 1/4 cup unsweetened applesauce
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/4 tsp vanilla extract
- 1/4 cup chopped walnuts (optional)
- 1/4 cup cream cheese, softened
- 1 cup white chocolate melts
- Lollipop sticks
Instructions

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, combine grated carrots, flour, sugar, vegetable oil, applesauce, baking powder, baking soda, cinnamon, salt, and vanilla extract. Stir until well combined.

If desired, fold in chopped walnuts.

Using a cookie scoop or tablespoon, portion out the carrot cake mixture and roll into balls. Place on the prepared baking sheet.

Bake for 20-25 minutes or until a toothpick inserted into the cake pops comes out clean. Allow them to cool completely.

In a separate bowl, mix cream cheese until smooth. Using a spoon or piping bag, spread or pipe a small amount of cream cheese on top of each cake pop.

Insert a lollipop stick into each cake pop.

Melt the white chocolate melts according to package instructions.

Dip each cake pop into the melted white chocolate, allowing any excess to drip off.

Place the dipped cake pops back onto the baking sheet and let them set at room temperature or in the refrigerator until the chocolate hardens.

Once the chocolate has hardened, serve and enjoy!
