  • 2 cups grated carrots
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.

  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  3. In another bowl, mix together the vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until well combined.

  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined.

  5. Fold in the grated carrots, crushed pineapple, and chopped walnuts (if using).

  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  7. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

  8. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

  9. Once cooled, frost the cake with your favorite cream cheese frosting and decorate as desired.

  10. Slice and serve the moist carrot cake.
