Ingredients

  • 4 pounds prime rib roast
  • 2 tablespoons olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat the oven to 450°F (230°C).

  2. In a small bowl, combine olive oil, rosemary, thyme, salt, and pepper.

  3. Rub the mixture all over the prime rib roast, ensuring it is evenly coated.

  4. Place the roast on a rack in a roasting pan, fat side up.

  5. Roast in the preheated oven for 15 minutes to sear the exterior.

  6. Reduce the oven temperature to 325°F (165°C) and continue roasting for about 1 hour and 45 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.

  7. Remove the roast from the oven and let it rest for 20 minutes before carving.

  8. Slice the prime rib into thick slices and serve.
