Ingredients

  • 4 lbs prime rib roast
  • 2 tbsp olive oil
  • 2 tbsp minced garlic
  • 1 tbsp dried rosemary
  • 1 tbsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 450°F (230°C).

  2. Rub the prime rib roast with olive oil, minced garlic, dried rosemary, dried thyme, salt, and pepper.

  3. Place the roast on a roasting rack in a roasting pan.

  4. Roast the prime rib for 15 minutes to sear the outside.

  5. Reduce the oven temperature to 325°F (160°C) and continue roasting for about 1 hour and 45 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.

  6. Remove the roast from the oven and let it rest for 15-20 minutes before slicing and serving.
