  • 4 medium potatoes, peeled and grated
  • 2 tablespoons all-purpose flour
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 200g smoked salmon slices
  • 2 tablespoons chopped fresh dill
  • Salt and pepper, to taste

Instructions

  1. Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture.

  2. In a large bowl, combine the grated potatoes, flour, salt, and pepper.

  3. Heat the olive oil in a large skillet over medium heat.

  4. Take small handfuls of the potato mixture and shape them into patties. Place the patties in the skillet and flatten gently with a spatula.

  5. Cook the hash browns for about 5-7 minutes on each side, until crispy and golden brown.

  6. In a small bowl, mix the Dijon mustard with a pinch of salt.

  7. Top each hash brown with a teaspoon of mustard, followed by a slice of smoked salmon.

  8. Garnish with fresh dill and serve hot.
