Ingredients

  • 1 lb. Russet potatoes, peeled and diced
  • 8 oz. green beans, trimmed
  • 1/4 cup red onion, diced
  • 1/4 cup olive oil
  • 2 tbsp. white wine vinegar
  • 1 tsp. Dijon mustard
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. In a large pot, boil potatoes in salted water until tender, about 12-15 minutes. Drain and set aside to cool.

  2. In another pot, cook green beans by blanching in boiling water for 3-4 minutes. Drain and set aside to cool.

  3. In a small bowl, whisk together olive oil, vinegar, Dijon mustard, garlic, salt, and pepper.

  4. In a large bowl, combine cooled potatoes, green beans, and red onion. Drizzle the dressing over and toss gently to combine.

  5. Serve cold or at room temperature.
