  • 2 pounds of baby potatoes, halved or quartered
  • 2 tablespoons of olive oil
  • 1 packet of ranch seasoning mix
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large mixing bowl, combine the potato halves, olive oil, ranch seasoning mix, salt, and pepper. Toss until the potatoes are coated evenly.

  3. Arrange the potatoes in a single layer on a baking sheet.

  4. Roast in the preheated oven for about 40 minutes or until the potatoes are golden brown and crispy, flipping them once halfway through.

  5. Remove from the oven and sprinkle with fresh parsley for added freshness and flavor. Serve hot.
