- 4 large baking potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Optional toppings: sour cream, chives, grated cheese
Instructions

Preheat the oven to 425°F (220°C).

Wash the potatoes and pat them dry with a paper towel.

Prick each potato several times with a fork.

Rub each potato with a little olive oil, then sprinkle with salt and black pepper.

Place the potatoes directly on the oven rack and bake for 1 hour, or until the skins are crispy and the insides are soft and fluffy.
