Ingredients

  • 4 large baking potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional toppings: sour cream, chives, grated cheese

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Wash the potatoes and pat them dry with a paper towel.

  3. Prick each potato several times with a fork.

  4. Rub each potato with a little olive oil, then sprinkle with salt and black pepper.

  5. Place the potatoes directly on the oven rack and bake for 1 hour, or until the skins are crispy and the insides are soft and fluffy.

  6. Remove the potatoes from the oven and allow them to cool for a few minutes.

  7. Slice a slit in the top of each potato and gently squeeze the ends to open them up.

  8. Serve the jacket potatoes hot, with your choice of toppings such as sour cream, chives, or grated cheese.
