A classic Thanksgiving side dish with a sweet and gooey marshmallow topping.

Ingredients

  • 2 large sweet potatoes
  • 1/4 cup unsalted butter, softened
  • 1/4 cup milk
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup mini marshmallows

Instructions

  1. Preheat oven to 375°F.

  2. Peel and chop sweet potatoes into chunks. Boil in a large pot of water until tender, about 15-20 minutes.

  3. Drain sweet potatoes and add them to a large mixing bowl. Mash with a potato masher.

  4. Add softened butter, milk, brown sugar, vanilla extract, cinnamon, nutmeg, and salt. Mix well.

  5. Transfer to a greased 8-inch baking dish.

  6. Top with mini marshmallows.

  7. Bake for 20-25 minutes, until marshmallows are golden brown.

  8. Serve hot and enjoy!
