How To Make Potato, Cheddar & Red Onion Pasties

Ingredients
- 2 large potatoes, peeled and diced
- 1 red onion, finely chopped
- 1 cup shredded cheddar cheese
- 2 tablespoons chopped fresh parsley
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 1 package (2 sheets) ready-to-use puff pastry
- 1 egg, beaten (for egg wash)
Instructions

Preheat the oven to 375°F (190°C).

In a large bowl, combine the diced potatoes, chopped red onion, shredded cheddar cheese, parsley, thyme, salt, and pepper. Mix well to combine.

Roll out the puff pastry sheets and cut each sheet into 4 equal squares.

Spoon a generous amount of the potato mixture onto one half of each puff pastry square, leaving a border around the edges.

Fold the other half of the puff pastry over the filling to create a triangle shape. Press the edges firmly to seal.

Place the pasties onto a baking sheet lined with parchment paper. Brush the tops with the beaten egg wash.

Bake in the preheated oven for 25-30 minutes, or until the pasties are golden brown and crispy.

Remove from the oven and let cool slightly before serving.
