- 4 cups shredded cabbage
- 1 cup shredded carrots
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup apple cider vinegar
- 2 tablespoons Dijon mustard
- 2 tablespoons honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup olive oil
Instructions

In a large bowl, combine the shredded cabbage, shredded carrots, chopped red onion, and chopped fresh parsley.

In a separate small bowl, whisk together the apple cider vinegar, Dijon mustard, honey, salt, black pepper, and olive oil until well combined.

Pour the vinaigrette dressing over the cabbage mixture and toss until all the ingredients are well coated.
