How To Make Roast Pork with Crackling

Ingredients
- 2.5 lbs pork shoulder, bone-in
- 2 tsp salt
- 1 tsp ground black pepper
- 1 tbsp vegetable oil
Instructions

Preheat the oven to 425°F (220°C).

Score the pork skin with a sharp knife, making shallow cuts in a diamond pattern.

Rub the salt and pepper all over the pork, including the scored skin.

Place the pork on a wire rack set inside a roasting pan.

Drizzle the vegetable oil over the pork, ensuring it coats the skin.

Roast the pork for 30 minutes at 425°F (220°C) to get the crackling started.

Reduce the oven temperature to 350°F (180°C) and continue roasting for 1.5 hours or until the internal temperature reaches 145°F (63°C).

Remove the pork from the oven and let it rest for 15 minutes before carving.
