Ingredients

  • 2 kg pork belly
  • 2 tbsp malt vinegar
  • 2 tbsp honey
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder

Instructions

  1. Preheat the oven to 220°C (425°F). Score the skin of the pork belly in a criss-cross pattern, making sure not to cut into the meat. Place the pork belly on a rack in a roasting pan.

  2. In a small bowl, mix together the malt vinegar, honey, salt, black pepper, and garlic powder. Brush the mixture all over the pork belly, making sure to get it into the cracks and crevices.

  3. Place the roasting pan in the preheated oven and roast for 30 minutes, or until the skin starts to crisp and bubble up. Reduce the oven temperature to 180°C (350°F) and continue roasting for another 1 ½ to 2 hours, or until the pork is cooked through and the crackling is crispy and golden.

  4. Remove the pork from the oven and let it rest for 10-15 minutes before carving. Serve with your favorite sides and enjoy!
