Ingredients

  • 2 lb. boneless pork roast
  • 1/2 cup dried cranberries
  • 1 tbsp chopped fresh sage
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chicken broth
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F.

  2. Season pork roast with salt and pepper.

  3. Heat olive oil in a skillet over medium-high heat. Sear the pork roast on all sides until browned.

  4. In a small bowl, mix together cranberries, sage, garlic, and chicken broth.

  5. Place the pork roast in a baking dish and brush with the cranberry mixture.

  6. Cover the dish with foil and bake for 1 hour.

  7. Remove foil and bake for an additional 30 minutes, or until the pork reaches an internal temperature of 145°F.

  8. Let the pork rest for 10 minutes before slicing and serving.
