Serves:

Ingredients

  • 1.5 pounds pork shoulder, cut into cubes
  • 2 tablespoons flour
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 apples, cored and sliced
  • 1 cup apple cider
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf

Instructions

  1. Preheat the oven to 325°F (163°C).

  2. In a large bowl, toss the pork cubes with flour, salt, and pepper until well coated.

  3. Heat the olive oil in a Dutch oven or large oven-safe pot over medium-high heat. Add the pork cubes and cook until browned on all sides. Remove from the pot and set aside.

  4. In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent and fragrant.

  5. Add the sliced apples to the pot and cook for another 2 minutes.

  6. Return the pork cubes to the pot, along with any juices. Pour in the apple cider and chicken broth. Stir in the dried thyme and add the bay leaf.

  7. Cover the pot and transfer to the preheated oven. Cook for 1 hour and 30 minutes, or until the pork is tender and the flavors have melded together.

  8. Remove the bay leaf before serving.

  9. Serve the casserole hot with mashed potatoes or crusty bread.
