Ingredients

  • 2 pork tenderloins (about 2 lbs total)
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 cup apple cider
  • 1/4 cup apple cider vinegar
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tbsp cornstarch
  • 1 tbsp water

Instructions

  1. Preheat oven to 375°F.

  2. Season the pork tenderloins with salt and pepper.

  3. Heat olive oil in a large, oven-proof pan over medium-high heat.

  4. Sear the pork for 2-3 minutes on each side, until golden brown.

  5. In a mixing bowl, whisk together apple cider, apple cider vinegar, honey, garlic, and thyme.

  6. Pour the mixture over the pork in the pan.

  7. Cover the pan with foil or a lid and bake for 25-30 minutes, or until the pork reaches an internal temperature of 145°F.

  8. Remove the pork from the pan and cover with foil to keep warm.

  9. In a small bowl, mix together cornstarch and water.

  10. Whisk the cornstarch slurry into the apple cider sauce in the pan and cook over medium heat until thickened, stirring constantly.

  11. Slice the pork and serve with the apple cider sauce.
