Serves:

Ingredients

  • 4 cups fresh cherries, pitted
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a bowl, combine the cherries, 1/2 cup of sugar, and lemon juice. Stir until the cherries are well coated.

  3. In a separate bowl, mix together the flour, 1/4 cup of sugar, baking powder, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

  4. In a small bowl, whisk together the milk and vanilla extract. Pour the milk mixture into the flour mixture and stir until just combined.

  5. Transfer the cherry mixture to a greased baking dish and spread it out evenly. Drop spoonfuls of the cobbler batter on top of the cherries.

  6. Bake for 30 minutes or until the cobbler topping is golden brown and the cherries are bubbly.

  7. Allow the cobbler to cool for a few minutes before serving. Serve warm with a scoop of vanilla ice cream or whipped cream, if desired.
