Serves:
Ingredients
- 4 cups fresh cherries, pitted
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1/4 cup milk
- 1/2 teaspoon vanilla extract
Instructions
-
Preheat the oven to 375°F (190°C).
-
In a bowl, combine the cherries, 1/2 cup of sugar, and lemon juice. Stir until the cherries are well coated.
-
In a separate bowl, mix together the flour, 1/4 cup of sugar, baking powder, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
-
In a small bowl, whisk together the milk and vanilla extract. Pour the milk mixture into the flour mixture and stir until just combined.
-
Transfer the cherry mixture to a greased baking dish and spread it out evenly. Drop spoonfuls of the cobbler batter on top of the cherries.
-
Bake for 30 minutes or until the cobbler topping is golden brown and the cherries are bubbly.
-
Allow the cobbler to cool for a few minutes before serving. Serve warm with a scoop of vanilla ice cream or whipped cream, if desired.
